The white or Thai aubergine is a vegetable originally found in Asia. This vegetable is relatively unknown at our latitudes.


It is usually used to make green or red curry. The vegetable tastes very bitter when raw and has a mild, spicy flavour. The cooking process helps to reduce this bitterness, making it more palatable.
